Our Borage plant is just now beginning to bloom these beautiful, star shaped flowers which I remember my Auntie candying for decoration on the birthday cakes of the Summer-born. The flowers have a very delicate taste, but the entire plant is edible. I've read garden books which recommend freezing the blooms for decoration in drinks, or using the flowers to garnish a fruit salad, or dessert. Borage leaves should be harvested when young and have a mild cucumber taste. The leaves, like those of Watercress, can be mixed with cream cheese and butter for tea sandwiches, or used in soups. Borage is one of my favourite annual herbs.
